Makes 3 dozen cookies
Ingredients:
3/4 cup Gil’s Grapeseed Oil
1 cup mashed sweet potatoes
1 cup brown sugar
1/2 cup granulated sugar
2 teaspoons vanilla extract
3 tablespoons bourbon
1 egg
2 1/2 cups all purpose flour
1 teaspoon San Fran Sea Salt
1/2 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder
8oz dark chocolate chips
1 cup pecan halves
Instructions:
Preheat oven to 350°F and line 2 large baking sheets with parchment paper
Place grapeseed oil, mashed sweet potatoes, brown sugar, granulated sugar, vanilla, bourbon, and egg in a the bowl of an electric mixer fitted with the whisk attachment and whisk until combine. Swap out the whisk attachment with the paddle attachment.
In a separate bowl, place flour, salt, cinnamon, baking soda, and baking powder, stir to combine. Add the dry ingredients to the mixing bowl and stir to until combined. Add the chocolate chips and pecan halves to the bowl and stir to combine.
Scoop cookie dough (using a small scoop or tablespoon measure) and place, 2-inches apart, on the prepared baking sheet. Place in the oven and bake for 10-12 minutes or until the cookies are baked through. Remove from the oven and set aside to rest on a wire rack.
