makes 1 loaf
Ingredients:
4 cups all purpose flour
1 tablespoon granulated sugar
2 teaspoons Big Sur Gourmet San Fran Sea Salt
1 teaspoon baking soda
5 tablespoons California Extra Virgin Olive Oil
1 egg
1 3/4 cups buttermilk
1 cup raisins or dried currants
Instructions:
Preheat oven to 350°F. In a large bowl, place flour, sugar, salt, and baking soda, stir to combine. In another large bowl, add olive oil, egg, and buttermilk, whisk to combine. Make a well in the center of the flour mixture and pour in the wet ingredients. Stir the dry ingredients into the wet center creating a loose dough. Add the raisins and, using your hands, continue to mix the ingredients together forming a shaggy dough ball. Transfer the dough ball to a parchment lined baking sheet and score the top with an ‘x’. Bake for 45-55 minutes or until a cake tester comes out clean. (When you tap the bottom of the loaf, it will have a hollow sound). Remove from the oven and let cool slightly before slicing and serving.
