makes 4 hot dogs
Ingredients:
2 teaspoons Gil’s Double Garlic Olive Oil
1 link or 4oz chorizo sausage, casing removed
1/2 cup beer
1 tablespoon The Pepper Plant Chipotle Sauce
1 cup shredded cheddar cheese
1 teaspoon all purpose flour
4 large hot dogs
4 hot dog buns
1/2 cup Zinful Garlic Salsa
6-8 tortilla chips, crushed
Instructions:
Preheat the grill to medium high heat.
While the grill is preheating, heat oil in a medium skillet over medium high heat. Add chorizo and cook until golden brown and crumbly. Remove sausage from the skillet with a slotted spoon. Deglaze the pan with beer, add chipotle sauce and bring to a simmer. Once simmering, reduce heat to low.
Meanwhile, toss shredded cheese with flour to coat. Working in batches, sprinkle cheese into the skillet. Continuously whisk until cheese has melted, forming a thick sauce. Remove from the heat and stir in the sausage crumbles.
Grill hot dogs for 3-4 minutes or until they’re hot all the way through. Split the hot dog buns if necessary and place hot dogs inside. Top with cheese sauce, salsa and crushed tortilla chips before serving.
