This veggie-forward main dish (or hearty appetizer for a group) pairs so well with our new Asian Peanut Sauce. The savory and salty elements of the roasted peanuts, garlic, and ginger vibe so well with the fresh cucumbers, carrots, radishes, and fresh herbs (cilantro and scallions). The sweeter and citrusy notes of the sauce pair well with the noodles, lettuce, and cabbage, adding palate cleansing zest and sweet balance.

Ingredients:
1/2 head bibb lettuce leaves
1 cup red cabbage, shredded
1/2 cup carrots, julienne or shredded
1/2 cup radish, thinly sliced
1/2 cup bean sprouts
1/2 cup cucumber, thinly sliced
1 1/2 cups ramen noodles, cooked (according to the instructions on the package) and chilled
1/4 teaspoon sesame seeds
2 tablespoons fresh cilantro, leaves or chopped
2 tablespoons fresh scallions, chopped
2 tablespoons roasted peanuts, chopped
3/4 cup Gil’s Asian Peanut Sauce
Instructions
Build your lettuce wrap platter by placing the lettuce leaves, red cabbage, carrots, radish, cucumbers, bean sprouts, cooked ramen noodles (sprinkled with sesame seeds), cilantro, and scallions on a large plate, all portioned into individual sections for easy assembly. Place the chopped peanuts and Asian peanut sauce in small bowls, one for easier sprinkling the other for easier dipping, and serve.
