This easy dessert recipe is a great way to celebrate the season. Fresh apples are roasted with our California Extra Virgin Olive Oil, baking spices, and brown sugar for a unique and tasty twist on the beloved and fruity shortcake. To speed up the process, we opted for pre-made or boxed angel food cake. A light and pillowy cake perfect for soaking up all that roasted apple goodness.
Serves 6-8
Ingredients:
4 apples, cored and sliced
1/2 cup brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Pinch of ground cloves
Pinch of ground all-spice
1/4 teaspoons San Fran Sea Salt
1 teaspoon vanilla extract
1/4 cup lemon juice
4 tablespoons Gil’s California Extra Virgin Olive Oil
Angel food cake, sliced
Sweetened whipped cream or whipped topping
Mint sprigs, for garnish
Instructions
Preheat oven to 400°F. Place apples in a large bowl and season with brown sugar, cinnamon, nutmeg, cloves, all-spice, and salt, toss to coat. Add the vanilla, lemon juice, and olive oil to the bowl and stir to combine. Transfer the apples to a large casserole dish and place in the oven. Roast for 30 minutes, stirring halfway through, or until the apples are tender. Remove from the oven and set aside to cool for 15 minutes. Divide slices of angel food cake between plates and top with the roasted apples and pan juices. Dollop the cakes with whipped cream and garnish with mint sprigs before serving.
