Balsamic Fig Jam Galette with Pistachio Ice Cream

This semi-homemade galette recipe is big on figs! The rustic jam is made using dried figs and our Fig Balsamic Vinegar, slow simmered for maximum flavor extraction. The jam is wrapped in premade pie dough and baked golden brown and bubbly–very easy and deliciously rewarding. A couple scoops of pistachio ice cream makes this a great dessert.


Serves 6 


Ingredients: 

12 ounces dried figs 

1 ½ cups granulated sugar

6 tablespoons Gil’s Fig Balsamic 

1 cup water 

1 tablespoon lemon juice 


1 premade pie dough 

1 egg, beaten 

Pistachio Ice Cream 

Fresh mint, for garnish


Instructions 

Place dried figs, sugar, balsamic, water, and lemon juice in a large saucepan, stir to combine. Bring to a simmer over medium heat and cook for 30 minutes, stirring occasionally (or until the figs are very soft). Set aside to cool for 15 minutes. 

Preheat the oven to 350°F and line a large baking sheet with parchment paper. Unroll the pie dough and place it on the center of the baking sheet. 

Once cooled, transfer the figs to a food processor along with ½ cup of the liquid, puree until smooth. 

Spoon the mixture into the center of the pie dough, spreading out in an even circle, leaving 1 to 1 ½ -inch of clearance around the edge. Pull the edges of the dough towards the center, overlapping slightly. Brush the exposed dough with egg wash and place in the oven. 

Bake for 20 to 30 minutes or until the crust is golden brown and the filling is lightly bubbly. Remove from the oven and set aside to cool for 10 minutes before slicing. Top galette slices with pistachio ice cream and garnish with mint.
